Let's admit it - Onion Bhajis (Fritters) are a delight and can be savoured any time of the day (or night!). It's perfect for a rainy day, cloudy day, hot day, cold day and even a lazy day!
The easiest way to get these is to get someone else do the cooking else don't despair, you can make these quickly and serve them hot & crispy.
Here's the recipe to get cooking
Ingredients
- 3 Big white onions
- Oil for deep frying
- 1 teaspoon salt
- 1 tablespoon garlic paste
- 1 tablespoon coriander powder
- Green chillies paste (3 chillies or as per required spice level)
- 1 pinch asafoetida
- 250ml (1 cup) gram flour
- Garnish - Half a tablespoon chat masala (optional) & finely chopped coriander leaves
Instructions
- Slice the onions in fine rings
- Mix salt, garlic paste, chilli paste, coriander powder and the asafoetida.
- Mix this mixture with gram flour and add little bit of water to create a paste. Ensure to add little water while mixing to ensure the paste is not too thin and is thick enough to hold its shape
- Add onions and cover them with this paste properly
- Heat the oil over medium heat. The oil is ready when a piece of paste sizzles and browns in about 25 seconds.
- Fry the onion bhajis in batches till these are a bit brown and cooked well
- Transfer the onion bhajis onto paper towels to drain any excess oil.
- Sprinkle chat masala and garnish with finely chopped coriander leaves
- Serve with green coriander / mint chutney or tomato sauce.
